Instructions

Pre heat your oven to 360 degrees Fahrenheit

In a bowl add your room temperature butter and sugars and beat with a hand mixer or stand mixer on medium high for 7 minutes or until your butter sugar mix doubles in volume and has a lighter color.

Next in a separate bowl beat your eggs and egg yolks together and add in your vanilla extract or paste. Then put your stand mixer or hand mixer on the lowest speed setting, and slowly drizzle in your beaten eggs and extract. Make sure you see no more yellow egg color in your batter before you continue. Do not beat your over 1 minute. If after one minute you still see yellow take a spatula and mix it by hand. This is to ensure that you don’t whisk a lot of air into the egg whites.

Then combine your bread flour, all purpose flour, bread flour, baking soda, and baking powder in a bowl and use a fork or whisk and mix it until everything is well incorporated.

Chop up your chocolate bars into large chunks and add a little bit of your flour mixture and coat all of your chocolate chunks.

Next on low speed on your hand mixer or stand mixer add in your mix and mix for 45 seconds. Turn off your mixer and add your chocolate chunks and mix with a spatula until you see no more big pockets of flour.

You can bake your cookies right away for 15 minutes on 360 or put your dough in fridge for 4 hours up to 4 days to let the flour hydrate then bake. It’s up to you :) I hope you enjoy!
