Buffalo Chicken Quinoa Bites

These are healthy protein bites that are great for snacks and appetizers. Great for games!!! Make then Gluten Free by substituting Gluten free Panko and flours. I used Quinoa flour and 4C Gluten Free Panko Crumbs

1 cupquinoa
cooked
1 cupchicken
shredded
¼ cupgoat cheese
¼ cupsharp cheddar
¼ cupbuffalo sauce
¼ cupPanko
1egg
large, beaten
2 tablespoonswhole wheat flour

black pepper
freshly ground, to taste
1 cupGreek yogurt
¼ cupblue cheese
½ teaspoongarlic powder
½ teaspoondried dill
½ teaspoondried parsley

Instructions
Step 1
In a small bowl, combine Greek yogurt, blue cheese, garlic powder, dill, parsley, salt and pepper, to taste; set aside in the refrigerator.

· Preheat oven to 350 degrees F. Lightly oil a mini muffin pan or coat with nonstick spray.

· In a large bowl, combine quinoa, chicken, goat cheese, sharp cheddar, buffalo sauce, Panko, egg, flour, salt and pepper, to taste.

· Using a small cookie scoop, scoop the mixture evenly into the muffin tray, about 1 1/2 tablespoons for each.

· Place into oven and bake for 18-20 minutes, or until golden and set. Let them rest 5 minutes before removing as they are delicate.
Step 6
· Serve immediately with dipping sauce.
