Instructions

Step 1
Preheat the oven to 425°F (218°C). Mix maple syrup and tamari in a bowl to make the marinade. Place salmon fillets in a ziplock bag with the marinade and shake well. Leave the fillets in the bag and place in the fridge while you prepare the rest.

Step 2
Wash the sweet potato and cut it into even fry-shaped pieces. Toss the fries in olive oil and season with salt and pepper. Place fries on a foil-lined baking sheet and bake in the oven on the middle rack for 30 minutes or until golden (baking times vary depending on how thin/thick you slice your fries). At the halfway mark (15 minutes), flip the fries.
Step 3
Then, after the full 30 minutes, remove the fries from the oven. Transfer the fries from the baking sheet to a bowl and cover to keep them warm.
Step 4
Turn the oven up to 500oF (260oC) and move the middle rack to the top. Place the salmon fillets on the foil-lined baking sheet. Bake in the oven for 7 to 8 minutes depending on the thickness. The salmon is done when it flakes easily with a fork and is no longer translucent in the middle.
Step 5
Serve the salmon on a bed of spinach with the sweet potato fries on the side. Enjoy!
