Instructions
Milk Bread
Step 1
Add room temperature cream, milk, egg, yeast and sugar in a stand mixer fitted with a hook attachment then add the flours and salt. Mix on low speed for 15 minutes until dough has formed together and is slightly sticky.

Place dough onto a clean surface and shape the dough into a ball and proof it for 60-90 minutes until the dough has doubled in size. Punch the air out of the dough and cut into 16 equal pieces.
Char Siu

Cut the pork shoulder into 3" thick strips

Combine the sugar, salt, shaoxing wine, soy sauce, hoisin sauce, molasses, 5-spice, white pepper, sesame oil, and minced garlic. Reserve 2 tbsps of the marinade and rub the pork with the rest of the marinade. Marinate the pork for at least 1 hour.

Preheat oven to 457 F and place the marinated pork on a baking rack set over a foiled baking sheet. Pour about 1 cup of water into the tray and roast the pork for 20 minutes. Reduce the temperature to 375 F and flip the pork.
Step 6
Rotate the pan to get an even browning and roast for another 15 minutes. Mix the 2 tbsp of reserved marinade with maltose and baste the pork with the mixture. Flip and roast for another 10 minutes.

Remove the pork once it has reached an internal temperature of 150 F. Allow the pork to rest.
Char Siu Bao
Step 8
Dice 2 cups worth of the char siu into small cubes. In a pan, sweat the diced onions and add the sugar, soy sauces, oyster sauce, and sesame oil. Once the mixture is bubbling, add chicken stock and corn starch slurry, Reduce until thickened. Stir in diced char siu.

Step 9
Take pieces of milk bread dough and roll out each piece into a 4" circle. Add 2 tbsp of the char siu filling to each dough piece and crimp shut.
Step 10
Lay the char siu bao on a parchment lined baking sheet about 3" apart. Cover and proof for 1 hour.
Step 11
Preheat the oven to 375 F and brush the buns with some egg wash and sprinkle with sesame seeds. Bake for 20-25 minutes until golden brown.
