Ingredients
2 servings
2 tablespoonolive oil
1red onion
finely chopped
3garlic cloves
finely chopped
250glean minced beef
½ teaspoonground cumin
1red pepper
small, deseeded and diced
400gcan chopped tomatoes
tomato purée
2 teaspoonsmild chilli powder
200mlBeef Stock
400gcan red kidney beans
rinsed and drained
salt
pepper
brown rice
to serve
Instructions
Step 1
Heat the oil in a saucepan, add the onion and garlic and cook for 5 minutes or until beginning to soften.
Step 2
Add the mince and cumin and cook for a further 5-6 minutes or until browned all over
Step 3
Stir in the red pepper, tomatoes, tomato purée, chilli powder and stock and bring to the boil.
Step 4
Reduce the heat and simmer gently for 30 minutes.
Step 5
Add the beans and cook for a further 5 minutes.
Step 6
Season to taste and serve with brown rice cooked according to the pack instructions.
