Joshua Weissmans - Ice Cream - Peanut Butter, Reeses Pieces Ice Cream

Hey! So here's a recipe for you from my favourite guy on the web, Joshua Weissman. This recipe was adapted from his coffee recipe with a few add ons. Step 1

Start by measuring out your peanut butter, leave on the side.

Step 2

To a medium-size pot, add in half the heavy cream, whole milk, granulated sugar, and a small pinch of salt.

Step 3

Heat over medium heat. Make sure not to boil it and that it’s just really hot. Then whisk in your peanut butter, off the heat.

Step 4

Fill a large bowl with ice water and place a small bowl in that ice bath. Add the rest of the heavy cream to the small bowl and set to the side.

Step 5

Separate egg yolks into a medium bowl. Whisk and slowly ladle in the hot milk/cream mixture to temper the eggs.

Step 6

Add tempered eggs back to the milk/cream mixture pot and heat. Don’t boil or let the temperature rise above 170F. Stir and maintain heat until it thickens to coat the back of a spoon.

Step 7

Pour custard through a fine-mesh sieve into the small bowl in the ice bath. Stir until it has completely cooled.

Step 8

Add ice cream base to your ninja creami individual containers up to the maximum line. This will fill up 2 full ones and leave half for another batch.

Step 9

Freeze your mixture overnight.

Step 10

Get your fancy ninja creami out, place your ice cream base into the mixer. Click on the gelato button and let it do its thing.

Step 11

After this, mix in your add ins. Then click on to 'Mix in'.

After that is done your ice cream is ready to devour. When I tell you this recipe taste exactly like Ben & Jerrys Peanut Butter cup, its true! Please try it if you get the chance! My daughter asked for a big scoop straight after it was made.
