Sesame Soy Pork Bowls

Instructions

Step 1
Cook Jasmine rice according to package directions and set aside to keep warm.
Step 2
Wash and dry all produce. Zest and quarter lime. Roughly chop cilantro.
Step 3
In a small bowl, combine Mayo and Sriracha to taste. Add 1 tsp water at a time until mixture reaches drizzling consistency.
Step 4
Heat a drizzle of oil in a large pan over medium high heat. Add pork and a big pinch of salt. Cook, breaking up meat into pieces, until browned and cooked through. Stir in carrots, sesame dressing, 5 tbsp hoisin sauce, and 1 tsp sugar. Cook until carrots are softened and sauce is thickened. Taste and season with salt and pepper. Turn off heat.
Step 5
Divide rice between bowls and top with pork mixture and any remaining sauce from the pan. Drizzle with Sriracha Mayo. Sprinkle crispy fried onions and cilantro on top. Serve with lime wedges on the side.
