Foo Chew-style rice wine chicken noodle soup

Typically a red coloured dish, this is a white version using store bought fermented glutinous rice wine. Using the instant pot, the chicken is fall off the bones tender. We add somen noodles and have it during birthdays and special occasions.

Instructions

Step 1
Turn instant pot to sauté. When it’s hot, add ginger and sauté till golden brown. Add chicken drumsticks to sauté together with minced garlic.
Step 2
Add bottle of fermented rice wine, chicken powder and Chinese cooking wine. Mix and then close lid. Turn vent to sealing and cook on high pressure for 15 mins
Step 3
Cook the somen noodles in a pot of boiling water for about 1-2 mins. Drain when done and add a dash of Chinese cooking wine to mix with the drained noodles. Scoop soup over the somen noodles and enjoy while hot
