This is a simple sweet flaky pastry that can be used for a range of dessert recipes.

Instructions

Step 1
Rub the flour and butter together until it looks like fine breadcrumbs.
Step 2
Add the sugar and the beaten egg and mix through
Step 3
Add enough water to form a dough, lightly knead until it is well mixed and combined. Wrap and put in a fridge for at least 1/2 hour.
Step 4
Dust a grater with flour and then use this to grate the frozen butter.
Step 5
Take the dough from the fridge and roll out on a floured surface so it is about 60cm by 60cm.
Step 6
Sprinkle liberally the 2/3 of the grated butter and then fold in a quarter at the top and bottom. Add the remaining butter and book fold together. Remember to carefully to seal edges. You can add a number of other folds if you wish to add extra layers.
Step 7
Cover again and return to the fridge for at least 1/2 hour.
