Instructions
Step 1
1. Chop the onion, carrots and garlic and add to a large stock pot over medium high. Cook for 8 minutes or until slightly tender.
Step 2
2. Add your lentils, vegetable stock, thyme, salt and pepper and bring to a boil. Reduce to a low simmer and cook for 45 minutes.
Step 3
3. Scoop out 2 cups of the soup and blend until smooth. Return the blended soup to the stock pot and stir.
Step 4
4. Add thyme on top for garnish and serve hot! Enjoy
