Instructions

Step 1
1. Preheat oven to 400°F (200°C). 2. To make the biscuit dough, cube the Country Crock® Plant Butter into ¼-inch cubes and place in the freezer for at least 10 minutes. 3. To the bowl of a food processor add the flour, baking powder, and salt, then pulse to combine. 4. Add the cold Country Crock® Plant Butter in 3 rounds, pulsing 4 times after each addition, or until there are pea-sized butter chunks. 5. Transfer flour-and-butter mixture to a medium mixing bowl and add the water and Country Crock® Plant Cream. Mix with a fork until combined and stiff dough is formed. 6. Transfer dough to a clean, smooth surface and lightly press or roll out into a 1½-inch-thick sheet. 7. Cut using a 1½-inch ring mold and place on a parchment-lined baking sheet, about an inch apart. 8. Bake for 25 minutes. 9. While the biscuits are baking, make the whipped butter and the berry compote. 10. For the whipped butter, add all ingredients to a small mixing bowl and beat with an electric mixer until combined and smooth. Set aside. 11. For the berry compote, add all ingredients to a small saucepan over medium heat and simmer for 5 minutes or until the berries have softened and a thin sauce has formed (it will thicken more as it cools). 12. Allow biscuits to cool slightly before serving with whipped butter and berry compote
