Instructions
Step 1
In 4-quart saucepan, heat oil over medium-high heat. Stir in onion; cook 3 minutes.
Step 2
Stir in garlic; cook 1 minute longer.
Step 3
Stir in water, salsa, beans and chipotle chili powder; bring to a boil. Reduce heat.
Step 4
Place 3 cups of the bean mixture in food processor or blender container. Cover; process 30 seconds or until smooth. Return to saucepan.
Step 5
Stir in lime juice; simmer 10 minutes. Remove from heat; stir in cilantro. Top each serving with cheese and additional cilantro, if desired. Serve with tortilla chips.
