Swiss style meringue that I use whenever I need meringue. Great for topping pies, toasting with a blowtorch or cooked slow for meringue cookies.

Instructions
Step 1
1. Place everything in a bowl and place bowl over double boiler.
Step 2
2. Continually stir to avoid cooking the whites until the sugar has dissolved and the mixture runs clean from the whisk.
Step 3
3. Place bowl in stand mixer and whisk u til desired stiffness.
