Prawn Tacos

Instructions

Step 1
In a large frying pan, add a dash of oil followed by the diced onion. Cook until soft then add half the garlic and half the chilli. Cook for another minute or so before adding the chopped tomatoes
Step 2
Simmer for another minute before adding half the spice mix. Cook them through before adding your prawns to this mix. Let this simmer while you move onto the next step
Step 3
Add your sliced onions and peppers with a dash of oil to a frying pan and cook through for a minute or so before adding the rest of the spice mix and stir well. Let these soften on a medium temperature but make sure they don't burn. Add coriander to the prawn mix.
Step 4
Remove the prawns from the pan once cooked through but keep warm. Get another pan heated up
Step 5
Dip your small tortillas into the salsa that the prawns were cooking in so that the tortilla is mostly covered. Place onto the hot pan and cook for 30 seconds before flipping. Add 4 prawns, some sliced onion and peppers and some cheese. You can also add some more salsa if you want. Fold the tortilla in half and press down with a fish slicer and move onto a wire rack and cover with a towel to keep the heat
Step 6
Do this 6 times and put any spare salsa into a serving bowl. I served this with patatas bravas. Enjoy!
