Instructions

To make the doughballs

Step 1
Mix the 375g water and 100g sourdough starter in a bowl. Add 500g of flour and 10g of salt. Stir to combine and rest for 10 minutes.
Step 2
The dough will be very high hydration and therefore sticky, but start to pull the outer edges in towards the other side of the dough. Keep doing this around the bowl to create a shaggy ball. Leave to rest for 10 minutes.
Step 3
Repeat this step another 3 times with 10-minute rests in-between.
Step 4
Leave to rest in a warm area until doubled in size (4hrs).
Step 5
Pour dough out onto flowered counter and split into 4. Cup the dough into 4 dough balls, space out on the counter and cover with a tea towel and leave to rise for another 4 to 5 hours.

To make the pizza

Step 6
Preheat the oven to 220° Celsius. Put a breaking sheet or pizza stone in the oven if you have one.
Step 7
Lay a piece of greaseproof paper down. Gently flatten and stretch out the dough ball, trying to leave as much air in the outside crust as possible.
Step 8
Top with tomato sauce, mozzarella, a drizzle of olive oil, and whatever other toppings you want (try not to overload the pizza as the crust might not cook properly and become soggy).
Step 9
Cook for 10 minutes. Top with freshly picked basil leaves.
