Instructions
Step 1
Pre-heat the oven to 180°C
Step 2
In a large bowl, beat eggs on high speed for 5 minutes until thick and lemon coloured
Step 3
Gradually add in the sugar and beat until light and fluffy
Step 4
Beat in vanilla extract
Step 5
Combine flour and backing powder and gradually add to batter, beating on low speed until smooth
Step 6
In a saucepan, heat milk and butter until melted - add to batter and beat until just combined
Step 7
Pour into a greased 12" baking tin and bake for 40 - 45 minutes - until a toothpick inserted into the centre comes out clean
Step 8
Serve with whipped Manx double cream and fruit of your choice!
