Fresh Pasta with Almonds, Olives, and Tuna
If you go to the effort to make fresh pasta, show it off in a dish like this. The chewy, bouncy pasta is adorned with salty, chunky hunks of olive, tuna, and almond to create a mouthful of sensations. It’s also a quick one to put together with dried pasta on a busy night.

Ingredients
6 servings
3 tablespoonsextra-virgin olive oil
3garlic cloves
thinly sliced
3tomatoes
medium, cored and chopped
¼ cuppitted kalamata olives
chopped
1 recipeFresh Pasta
Basic, page 29, cut into fettuccine, substitute 8 ounces dried GF fettuccine
¼ cupalmonds
slivered, toasted and chopped
¼ cupGF breadcrumbs
or crushed rice cereal
½ cupfresh parsley leaves
packed, chopped
2 x 5 ouncetuna
cans, drained
1 teaspoonfine salt
1 teaspoonfreshly cracked black pepper
Instructions
Step 1
Bring a pot of salted water to a boil for the pasta.
Step 2
In a large sauté pan, heat the olive oil over medium heat and add the sliced garlic. Cook until the garlic sizzles and browns a little around the edges, about 2 minutes. Add the tomatoes and olives and stir, increasing the heat to medium-high. Cook just until the mixture is heated through.
Step 3
Cook the fresh pasta for 2 minutes, or until al dente. If using dried pasta, cook to al dente according to the pack-age instructions, checking for doneness 3 to 4 minutes be-fore the recommended cooking time. Drain well.
Step 4
Add the pasta, almonds, breadcrumbs, parsley, tuna, and salt and pepper to the pan and fold together gently.
Step 5
Heat until everything is warmed through and serve immediately.
