Instructions
Step 1
Preheat oven 400F. Sauté onion in a large sauce pan with oil until translucent.

Add garlic, thyme and scotch bonnet and cook for another minute.
Step 3
Add jackfruit and all the spices and herbs and fry for another 5 minutes, stirring occasionally.
Step 4
Add the vegetable and mushroom stock and cook down for 5 minutes. Remove from heat.
Step 5
In a baking pan, add the potatoes, carrots, red onion and any vegetables you desire and drizzle with oil and salt. Then top with jackfruit mixture.
Step 6
Cover the baking pan with foil and cook in the oven for 50 minutes and remove the foil for the last 20 minutes.
