Roasted Rack of Lamb
Roasted rack of lamb on a bed of roasted vegetables
Roasted Rack of lamb
Steak and chops spice
1 tsp gorimas pepper steak spice
1/4 -1/2 cup Worcestershire sauce
1 tsp meat tenderizer
1 tsp fresh fine garlic
1/2 tsp salt
1 tsp lemon pepper
2 tbsp lemon juice
1 tsp rough red chilli
1 tsp fine red chilli powder
1 tsp fine green chilli
2 tbsp tomato sauce
Glaze:
1/4 cup tomato sauce
1/4 cup apricot jam
1/4 cup Mrs. Balls Chutney
2 tsp green chilli
-Bring to a quick boil
-Slit the meat and place cloves in between the slits
-Rub generously with steak and chips spice
-Marinate with the remaining above ingredients overnight
-Heat a skillet with butter until hot
-Sear the rack of lamb I each side until it starts to brown
-Transfer into an oven pan and roast on 220°C for 10 minutes for medium rare meat (For well done meat, turn the racks and roast for another 10 minutes)
-Leave to rest for 10 minutes before serving
-Just before serving, brush glaze over and
-Serve with with roasted veg
