Step 1
Heat the oven to 180C/160C. Toast the walnuts until dark and fragrant, about 7-10 mins, taking care not to burn them. Allow to cool, then chop finely. Reserve 1 tablespoon to use as a garnish.
Step 2
In a bowl, mix with the cinnamon, nutmeg, sugar, sweet wine. Add the cooled nuts and stir up. Peel, core and finely chop the apples mi. Transfer it to a closed container and keep chilled.
