Instructions
Step 1
Wash, peel and cut yams into 1/4-inch slices.
Step 2
In an ungreased baking dish ( 8 inch x 8 inch, 2 quart), line sliced yams. Overlap to fit.
Step 3
In a saucepan, melt butter and sugar on low heat. Add cinnamon sticks and nutmeg. Stir and cook till sugar is dissolved.
Step 4
Add orange slices. Gently coat with sauce. Remove saucepan from heat right away to avoid overcooking.
Step 5
Pour sauce over yams evenly.
Step 6
Cover the yams with foil. Cook at 350F for 40 minutes, or until yams are soft when pierced with a fork.
Step 7
Remove foil and cook 5 more minutes or until golden brown.
