Chicken Tortilla Soup

Ingredients
6 servings
1 Cupwhite long grain rice
or brown
3 cupstortilla chips
slightly crushed
¼ cupdried onion
chopped or minced
2 tablespoonschicken bouillon granules
1 teaspoonsugar
1 teaspoonchili powder
1 teaspoonlemon pepper
½ teaspoonsalt
½ teaspoonpepper
½ teaspoongarlic powder
½ teaspoonground cumin
10 cupswater
1 x 12.5 ozcan Mexican style stewed tomatoes
1 x 4 ozcan diced green chilies
1 x 5 ozcan chicken
can, drained
1 x 15 ozcan black beans
optional, rinsed and drained
Instructions
Step 1
Combine water, tomatoes, rice, green chilies, and seasonings in a large pot. Bring to a boil over high heat; reduce heat, cover and simmer for 20 minutes or until rice is tender.
Step 2
Add can of chicken to the pot (and optional beans) and heat thoroughly. Sprinkle crushed tortilla chips over each serving. Yield: 3 quarts
