Instructions

Step 1
Pre-heat oven to 350 degrees
Step 2
Dice chicken thighs into small bite size pieces and set aside

Dice green pepper and onion
Step 4
Oil cast iron pan and place on medium high heat
Step 5
Cook green pepper and onion in pan until softened
Step 6
Clear space on pan and add a bit more oil, add chorizo and chicken

When chicken looks close to finish, clear another spot on pan, add oil and garlic. Cook until fragrant

Add 1 cup of rice to pan and mix

Add enchilada sauce
Step 10
Add 1 cup chicken broth

Add 1 tablespoon oregano

Add 1 teaspoon cumin

Add 1 teaspoon salt and 1 teaspoon pepper

Add diced chilis and canned diced tomatoes

Mix everything until combined

Bring to boil

Cover tightly with tin foil

Place in oven and cook until rice is finished, 15 - 18 minutes
Step 19
Take and uncover, add cheese and place back in oven for 3 minutes
