Instructions
Step 1
Cook rice according to package directions.
Step 2
Pulse spinach, edamame, scallion, sesame oil, ginger, and salt in a food processor until finely ground. Add rice and pulse until rice is coarsely chopped and mixture is well combined.
Step 3
Divide into 12 portions (~1.5 tablespoons). Using lightly moistened hands, roll into ball. Serve.
Step 4
Refrigerate up to 3 days, or freeze for up to 1 month.
