Ingredients

2 tablespoonsolive oil
1yellow onion
1carrot
1 Tbspgrated ginger
4cloves garlic
2 tspgaram masala
2 tspground turmeric
1 tspchilli powder
½ tsppaprika
½ tspcumin
¼ tspcayenne pepper
3 cupscauliflower florets
1 cupveggie broth
2cans fire roasted tomatoes
1can chickpeas
½ cupcoconut milk
2 Tbsptomato paste
1 Tbsplemon juice
¼ cupcilantro leaves

Instructions
Step 1
1. In a large skillet or pot, heat the oil over medium heat. Add onion and carrot; cook until tender. (about 5 min.)
Step 2
2. Stir in the tomato paste, ginger, garlic, garam masala, turmeric, chili powder, paprika, cumin, and cayenne pepper. Cool until well combined (1-2 min). Stir in cauliflower, diced tomatoes, and veggie broth. Bring Tia boil, reduce heat and simmer for 20 min. Stirring occasionally out until cauliflower is tender and sauce has thickened.
Step 3
3. Stir in chickpeas, coconut milk, and lemon juice. Cook until heated through.
Step 4
Serve with rice and/or naan.
