Instructions

Step 1
Make a big batch of this delicious fruit salad to keep in the fridge and see you through a few days. This is an easy way to eat the good stuff.
Step 2
Get yourself a big bowl that will fit happily in the fridge. Halve the passion fruit, then spoon the juicy centres into the bowl and squeeze in all the citrus juice. Pick and finely slice the mint leaves, add along with the oil and balsamic vinegar (trust me) and mix together. This will give extra flavour to your fruits, and the acid will stop any discolouring, but feel free to have fun and mix things up by adding flavours such as ginger, lemongrass, fresh basil, lemon balm, vanilla, tinned lychees or even prunes to accent the juices brilliantly.
Step 3
Now for your fruit – quite simply just prep and cut it all up into random bite-sized pieces that are a pleasure to eat. Avoid using any bruised fruit – that’s best frozen for use in smoothies. Add the fruit to the bowl as you prep it, then simply toss it all in the juices, cover and keep in the fridge until needed.
Step 4
The combo listed here is one of my favourites, but other great fruit that’s resilient enough to hold up includes grapes, melon (but not watermelon), pears, plums and papaya. Garnish-friendly fruit tends to be softer, such as bananas, raspberries and soft berries, watermelon and kiwi fruit – feel free to add this each time you take a serving to boost your fruit intake further, and remember, eating the rainbow is a wonderful thing. Serve with yoghurt or cottage cheese, and toasted nuts and seeds or granola dust (see here ).
