Japanese Soy Sauce Butter Potatoes (Kofuki Imo)

Instructions
Step 1
Peel the potatoes and cut into medium bite-sized pieces.
Step 2
Place in a pot covered with water over high heat and bring to a boil. Cook for 10 minutes or so until a fork goes through but the potatoes are not mushy.
Step 3
Drain into a colander and shake gently to create a slightly mashed surface over the potatoes.
Step 4
In a medium pan, bring soy sauce, water, and brown sugar to a boil over high heat, stirring constantly. Lower to medium heat and mix in the butter until it melts.
Step 5
Add the potatoes and toss to coat. Adjust seasoning to taste, and serve.
