Ingredients

1red chilli
1onion
large, roughly chopped
2 cmroot ginger
piece, peeled
2garlic cloves
peeled
500gturkey breast mince
1 tspground coriander
1 tspground cumin
¼ tspground turmeric
½ tspground cinnamon
¼ tspsmoked sweet paprika
120mlchicken stock
made from 1 chicken stock cube
1 x 400gtin chopped tomatoes
150gfrozen peas
fresh coriander
cilantro
3 Tbspfat free natural yoghurt
500gbasmati rice
cooked
Instructions
Step 1
Put the chilli in a blender or food processor with the onion, ginger and garlic and blitz until smooth.
Step 2
Combine all the spice mix ingredients, if using.
Step 3
Spray a saucepan with cooking spray and place over a medium heat. Add the turkey mince and cook for 5 minutes, breaking up the mince with a wooden spoon, then add the spice mix or curry powder and cook for another 2-3 minutes, until the meat is well coated.
Step 4
Add the onion, chilli, ginger and garlic purée and cook for another 5 minutes. Add the stock and chopped tomatoes, bring to the boil and simmer for 10 minutes, until the sauce has reduced and thickened.
Step 5
Stir in the frozen peas and chipped coriander and cook for a further 3 minutes.
Step 6
Remove from the heat, stir in the yoghurt, and serve with the basmati rice.
