Pork Stuffed Fried Tofu in Tomato Sauce

Instructions

Tofu prep

Step 1
Firm or Extra firm Tofu - (2) 16 oz pack
Step 2
Cut Tofu into (6) Squares
Step 3
Gently, with a pointed small knife make a square cut all the way through the center of the Tofu
Step 4
(Save the center tofu for another dish or add it to this dish)
Step 5
Stuff the Tofu with the Pork Filling
Step 6
In a pan on medium heat, add enough cooking oil to cover the Tofu 1/4 of the way
Step 7
Pan fry all sides of the stuffed Tofu about 2 minutes each or until it reaches a golden brown

Remove and set aside

Cooking the dish

Heat up a large pan on med high heat

Add 1 Tbsp cooking oil of choice

Once oil is hot, add Shallots then the Garlic
Step 12
Sauté for a minute
Step 13
Add Tomato, stir for a couple of minutes

Stir seasoning liquid well

Pour into the pan, stir well

Add in the fried stuffed Tofu

Once simmer, turn heat to medium low

Let simmer for 3-4 minutes

Occasionally drizzle the sauce over the Tofu

Adjust seasoning if needed

Continue simmering for 2-3 minutes or until the sauce thickens

Garnish with chopped green Scallions & Cilantro

Enjoy with steamed Jasmine Rice
