Instructions
Step 1
Chop sweet potatoes. Top up with water. Microwave at five minute intervals until soft. Drain.
Step 2
Add Madras powder, shallots, nigella seeds, gram flour. Top up with coconut milk. Microwave for three minutes. Mash with fork. Leave in fridge to set.
Step 3
Oil panini press. Spoon balls of potato mixture out. Cook for ten minutes, then flip and cook for five more
