G - One-Pot Haddock, Leek & Cheddar Chowder
Enjoy a creamy, comforting chowder with sweet leeks, tender haddock and melty cheddar cheese. Serve in deep bowls with a sprinkle of chives and freshly ground black pepper. Delish!

Step 1
Boil a kettle
Step 2
Chop the leek in half lengthways, then wash to remove any grit from between the leaves
Step 3
Top, tail and slice finely
Step 4
Heat a large, wide-based pot with a large knob of butter over a medium heat
Step 5
Once melted, add the chopped leek with a pinch of salt and cook for 5-6 min or until softened
Step 6
Chop the potatoes (skins on) into bite-sized pieces
Step 7
Dissolve the veg stock mix in 550ml boiled water and 100ml milk – this is your veg stock
Step 8
Once the leek has softened, add 1 tsp flour and cook for 30 secs or until fragrant
Step 9
Add the veg stock and chopped potatoes and cook for 15-18 min or until the potatoes are almost fork- tender
Step 10
Once the potatoes are almost fork-tender, add the haddock bites and soft cheese to the pot and cook for 4-5 min or until the haddock is cooked through and the potatoes are fork-tender
Step 11
While the haddock and potatoes are cooking, grate the cheddar cheese
Step 12
Chop the chives finely
Step 13
Once everything is done, add the grated cheddar to the pot and gently stir everything together - this is your haddock, leek & cheddar chowder
