Step 1
Mix together the marinade, I don't have exact measurements of the seasonings, smell and taste to preference. Not too thickly coat the legs in the seasoned mayo and lay closely together in a greased baking pan, olive oil works fine or avocado oil is also good.
Slice the yellow onions into rings and cover the top of the chicken, then take 1 cup of water and 1/4 cup of cooking wine and pour into the bottom of the pan, becarful not to wash off the mayo. Then preheat oven to 415 and cook covered with aluminum foil for 20mins. Them set oven to 450 and put them back in uncovered till done. It took another 25 mins for mine because they were fairly large.
Step 2
Cut the potatoes into small cubes to boil faster, I prefer not to peel them it makes them much more favorable. I just hope you would wash them first. Boil till soft them put into a bowl with the mayonnaise and splash of milk and mash till its creamy and add your salt and pepper
