Instructions
Step 1
Add chopped onion to preheated pan with a sneak bit of oil. Cook until translucent. Add beef and cook until brown. Add taco seasoning and salsa. Turn off heat.
Step 2
Take halved flour tortillas abs put them in a sealed bag with the taco sauce. Make sure all the tortilla halves are covered in taco sauce.
Step 3
Assemble in a 9×12 casserole dish. Oil/butter/spray dish with non-stick spray. Arrange 4 halves to cover bottom of pan. Use half the meat mixture spreading evenly. Add layer of half the corn and layer of half the black beans. Add 1 cup of cheese and spread evenly. Repeat with 4 tortilla halves, remainder of meat mixture, corn and black beans. Use remaining tortilla halves to cover mixture. Add the last cup of cheese on top. Bake for 20 minutes or until cheese on top is browned. Wait 10 mins to serve.
Step 4
Top with sour cream and serve.
