Ingredients

2 Tbspplain flour
3 Tbspolive oil
600gstewing steak
or shin
beef
cut into chunks
2onions
large, peeled and cut lengthwise into 8
325mlbeef stock
hot
2carrots
large, peeled and each cut into 8 chunky slices
100gmushrooms
sliced
1bay leaf
1 tspfresh thyme leaves
or dried
salt
pepper
Potatoes
mashed or boiled, to serve
325mlred wine
or stout
Instructions
Step 1
1. Place the flour onto a large plate. Season with salt and pepper and stir well.
Step 2
2 Heat 2 tablespoons of the oil in a large saucepan on a medium temperature.
Step 3
3. Place the stewing steak a few chunks at a time into the flour. Toss well to ensure each chunk is well covered and then place the meat into the pan.
Step 4
4. When all the chunks of beef have been floured and are in the pan, turn up the heat to brown the beef chunks well. You may need a little extra oil to stop the meat from sticking.
Step 5
5. Once the beef chunks are browned, remove them from the pan and set aside on a plate.
Step 6
6. Add the remaining tablespoon of oil to the pan and stir in the onions. Cook over a medium heat for 5 minutes until they soften slightly. Pour in half the beef stock and stir well. This is to incorporate any flavours and juices on the bottom of the pan.
Step 7
7. Return the meat to the pan, followed by the remaining stock, carrot, wine or stout, your choice of other vegetables, the bay leaf and the thyme leaves.
Step 8
8. Season with salt and pepper, stir well and allow to simmer over a gentle heat, covered with a lid, for at least 2 hours.
