Instructions
Step 1
Heat a large non-stick frypan over medium heat and toast pine nuts, shaking regularly, for a few minutes, until golden. Set aside.
Step 2
In same frypan over medium heat, cook onion for 3 minutes, or until softened.
Step 3
Turn heat to high, add mince and cook without stirring for a few minutes. Break up clumps, stir through spices and season with salt & pepper. Continue to cook for a few more minutes until browned.
Step 4
Add sweet potato and 1/3 cup water. Bring to a simmer and continue to cook, stirring regularly until all liquid has evaporated.
Step 5
Adjust seasoning and stir through spinach, parsley and toasted pinenuts.
Step 6
Serve with hummus, pita and fresh lemon wedges.
