Instructions
Step 1
In a large skillet, add about 1/2 inch of oil to a skillet.
Step 2
In a large bowl, combine the self-rising corn meal with about 1 1/2 cups of boiling water. Stir until well combined. The batter should be pourable. If you like a thinner and crispier cornbread, add more water.
Step 3
Using a 1/4 cup measuring cup, pour batter into the hot oil. Cook 3 to 5 minutes or until brown around the edges then carefully flip over and cook an additional 3 to 4 minutes. Add additional oil if necessary to fry the remaining batches. Drain on paper towel lined plate.
