Spelt Flat Bread
Spelt is a nutritious grain that is similar to wheat but easier to digest. It is rich in manganese, iron and copper, which are essential minerals for the production of collagen, the ‘glue’ that holds your skin together. This flat bread is delicious, and is quick and easy to make. Use it for making lunch wraps with dips, to make Spelt Chips* or delicious Potato and Pesto Pizza*

In a bowl
Step 1
Mix together the spelt flour and salt.
Step 2
Add the oil and hot water, and mix using a knife.
Step 3
The dough should not be sticky — if it is, add extra flour until it can be kneaded without sticking to the board.
On chopping board
Step 4
Lightly flour your chopping board and turn out the dough onto the board.
Step 5
Knead the dough for approximately 3 minutes, until smooth and elastic (add more flour if dough is sticky), then cut into six balls of similar size.
Step 6
Add more flour to the chopping board, then flatten each ball with a rolling pin to make large, very thin circles — each flat bread should be about 20–22 cm (8–8½ in) in diameter.
Step 7
You will need to add more flour as you go along to ensure the flat bread does not stick and can be rolled out paper-thin.
Frying pan
Step 8
Heat a large non-stick frying pan over mediumhigh heat and cook each flat bread for about 1 minute each side, or until bubbles appear and the bread becomes browned in spots.
Step 9
For soft wraps, don’t cook them for too long. The longer they are left in the pan, the crunchier they will be.
