Instructions
Preparation
Step 1
Cut the Chicken into large pieces. Then heat the oil in a large frying pan and brown the chicken then remove with a slotted spoon. Cut the sausages into thick pieces and the bacon into bite size pieces then cook off in the frying pan and set aside
Onions
Step 2
Peel and chop the onions then soften in the frying pan to absorb the juices left over from browning the meat.
Loading the slow cooker pot
Step 3
Place the chopped carrots in the pot first followed by the onions, then the chicken, bacon & sausage. Next drain the tin of Butter beans and pour in the beans, do the same for the Cannellini beans. Then add the tin of Chopped Tomatoes. Make up the stock using a chicken stock pot and a chicken oxo cube. Pour the stock on to just cover the contents. Then add the Garlic, Tomato Puree & Thyme and season with salt & pepper.
Cooking
Step 4
You can vary times to suit your schedule. The dish needs to be cooked for a minimum of 4 hours on high. But 8 hours on low would do the same job.
Reducing the sauce
Step 5
Leave the lid off for the last 20 minutes to reduce the sauce a little
Serving suggestion
Step 6
We like to serve ours on its own and eat it with a fresh Baguette. But you could easily add some mash or boiled potatoes and some peas or greens to go with it
