SKILLET -BAKED OATMEAL WITH SUMMER STONE FRUIT
Digging into this sweet, fragrant baked oatmeal is like eating a fruit crumble for breakfast. If that’s not enough to sell you on the idea, it’s also a great make-ahead breakfast option and a fl exible vehicle for your favorite seasonal fruit. I’ve made it with nectarines, plums, apples, pears, and even berries. The only trick is to adjust the baking time depending on how juicy the fruit is: longer baking times for juicy fruit, shorter baking times for less juicy fruit.

Ingredients

3 tablespoonswater
warm
1 tablespoonground flaxseed
225grolled oats
1 teaspoonbaking powder
1 teaspoonground cinnamon
¼ teaspoonsalt
630mlunsweetened nondairy milk
¼ cupmaple syrup
1 tablespooncoconut oil
or neutral vegetable oil
5peaches
or nectarines, peeled and cut into 1-inch, 2.5-cm
3 tablespoonssugar
1 teaspoonvanilla extract
¼ cuppecans
chopped, or walnuts, optional
Instructions
Step 1
Preheat the oven to 350°F (175°C). In a small bowl or measuring cup, whisk together the water and ground fl axseed and set aside to thicken for a few minutes.
Step 2
In a large bowl, stir together the oats, baking powder, cinnamon, and salt. In small bowl, whisk together the nondairy milk, maple syrup, and fl axseed mixture. Add to the oat mixture and stir until well combined.
Step 3
Heat the oil in a 10- or 12-inch (25- or 30-cm) cast-iron skillet over medium heat. Add the peaches and let them sizzle and cook for 1 minute. Sprinkle with 2 tablespoons of the sugar and the vanilla.
Step 4
Cook, stirring occasionally, for about 4 minutes, until the fruit is soft and just beginning to brown. Pour the oat mixture over the fruit, then stir gently until the fruit is evenly distributed.
Step 5
Bake for 20 minutes, then sprinkle the remaining 1 tablespoon sugar and the nuts over the top. Bake for about 10 minutes longer, until the fruit is bubbling in places and the surface is fi rm to the touch. Let cool for 5 to 10 minutes before serving.
