We ate the most amazing grilled cheese in Texas, and we’ve tried to replicate the melty deliciousness at home! You can add more gouda if you like, but be sure to adjust the calories. This is perfect paired with a piping hot bowl of Creamy Tomato Soup (here).

Step 1
Spray a frying pan with low-calorie cooking spray and place over a medium heat. Add the onion and fry gently for 2 minutes until it starts to soften. Reduce the heat to low, stir in the balsamic vinegar and cook for a further 10 minutes, stirring often.
Step 2
While the onion is cooking, spread the mayonnaise on both sides of each piece of bread.
Step 3
When the onion is cooked, take one of the pieces of bread and place the cheese on top. Spread the onion across the cheese and cover with the other piece of bread.
Step 4
Transfer to a hot frying pan and cook over a high heat for 5 minutes on each side, keeping a close eye on it while it’s cooking to make sure it doesn’t burn.
Step 5
Remove from the pan, slice and serve.

TIP:This is so easy to scale up and make more than 1 serving (we couldn’t resist making a stack!)
