Pickles, Hummus, Garlic Sausage & Granola
This is basically a loaded hummus and by all means take it as inspiration to create your own version. What I want to demonstrate is how grand and luxurious hummus really is. These days, you can find some version of hummus in most supermarkets and shops, but I find these dips rather sad versions of the real thing. A well-made hummus is sexy and deserves respect, especially as it will gladly hang out with flavours from all around the world, making it incredibly versatile.
Be sure to hunt down good bread, flatbreads or crispy crackers of some description, for all the mopping up that will need to be done.

Ingredients
4 servings
8 Tbsphummus
6 Tbspspiced granola
6 Tbsppickles
2garlic sausages
I like to use Turkish sujuk, but you could use chorizo or merguez
3 Tbspchickpeas
cooked, garbanzo beans, rinsed
1 handfulherbs
such as mint, coriander, cilantro, and parsley, leaves picked
1 handfulsalad leaves
such as chicory, endive, or gem sea salt flakes, kosher salt
extra-virgin olive oil
Instructions
Step 1
Prepare the hummus, the spiced granola and the pickles.
Step 2
Dice the garlic sausages into 1cm (½in) pieces. Add to a large frying pan (skillet) over a medium–high heat. Cook for 5–8 minutes or until the sausage is browned and the oil has separated. Add in the chickpeas (garbanzo beans) and warm through.
Step 3
Place the hummus in a bowl, or bowls, and smear around in a circle using the back of a spoon. Arrange the herbs, salad leaves, pickles and granola around the bowl and season with sea salt flakes (kosher salt), then drizzle over a little extra-virgin olive oil. Finish by spooning the sausage and chickpeas, along with their delicious oil, into the bowl.
