Cauliflower Rice with Blackened Chicken

Instructions
Step 1
Prep and season chicken breast. In a hot skillet, add 1 tbsp oil and blacken chicken.
Step 2
Remove chicken from pan and add in remaining olive oil. Add in onions, peppers and garlic. Cook until soft.
Step 3
Add in cauliflower rice and cook on med-high for 5 minutes, stirring often.
Step 4
Add in chicken base and incorporate. Season with desired seasoning.
Step 5
Cook until rice is slightly browned and excess moisture is gone.
Step 6
Place into individual containers with sliced chicken breast, avocado and salsa
