Instructions

Step 1
Add all ingredients to your bread machine (in the order your machine recommends) and run on the dough cycle. You can also knead by hand or with a dough hook for 7 minutes.

Let rest for 1 hour in a large, greased and covered bowl.

Grease a 8 or 9 inch loaf pan.

On a clean surface, deflate and spread the dough with your hands into a rectangle roughly 8x16in.

Leaving a 1 in border on all sides, brush on the egg water mix. You won’t use all of it here but save what’s left, you’ll need it later.

Whisk together the sugar, cinnamon and flour. Do not skip the flour, it’s very important.

Sprinkle the cinnamon mixture over the egg washed area.
Step 8
Grab the short side and roll the dough onto itself. Make sure to roll tightly.
Step 9
Place your loaf in the greased pan and lightly cover. Let rest for 1 hour. You want the dough to rise an inch above the rim so add an extra half hour to the rest time if needed.
Step 10
After it has risen, use the remaining egg wash to brush on top of the loaf and sprinkle on more oats. You can add any remaining cinnamon mix as well. Preheat the oven to 350.
Step 11
Cook for about 30 minutes and check on the color of the bread. If it’s browning too fast, cover with aluminum foil. Total bake time should take about 50 minutes. Temp the center of the bread and make sure it’s reached 190 degrees before removing.

Let cool for 2 hours on a wire rack before cutting.
