Step 1
In a large bowl, whisk together first 5 ingredients. In a separate bowl, combine flour, soda, cinnamon and salt. Combine the wet and dry ingredients. Add melted butter to combine. Stir in nuts, coconut and blueberries. Do not over mix. Line 12-16 muffin pans or liberally grease with butter or coconut oil. Fill 3/4 full. Bake at 350 for 18-25 minutes.
Step 2
You can also bake in a parchment lined or greased loaf pan for 50-60 minutes. This is a very forgiving recipe. You can sub other nuts or fruit. Add in are up to you!
