Ingredients

10 Tbspunsalted butter
1carrot
peeled and finely diced
1celery rib
finely diced
3scallions
including green stems, thinly sliced
½ cupunbleached all purpose flour
3 ½ cupschicken stock
or canned broth
1 ½ cupslight ale
1 cupparmesan cheese
freshly grated
12 ouncessharp yellow cheddar
grated
5 ozwhite cheddar
shredded
1 tspground white pepper
2 Tbspgreen bell pepper
diced, for garnish, optionals
2 Tbspred bell pepper
diced, diced for garnish, optional
Instructions
Step 1
Melt butter in a heavy pot over low heat. Add the diced veggies, scallions and flour. Cook uncovered for 5 minutes
Step 2
Add the stock and ale. Bring to a slow simmer, stirring well.
Step 3
Gradually whisk in the three cheeses ad the white pepper. Simmer over low heat for 7 minutes. Do not boil
Step 4
Serve, garnished with diced green & red peppers
