Lisa's Pizza Sauce (stored as ice cubes for easy meal prep)

***In this recipe, one "serving" = abt 1/2 cup of sauce, enough to make one large pizza. Homemade pizza is great, especially if you use a great sauce. What’s not so great is trying to make (or buy) just the right amount of pizza sauce needed for one pizza. One solution is to make a larger batch of pizza sauce and freeze it in ice cube trays. Then store the cubes in a freezer bag. When you want to make pizza, just thaw out the number of cubes you need. The following recipe is pretty great, IMHO. It's rich and zesty. But use whatever kind of sauce you like.

Instructions

Step 1
No cooking required! Just whisk all the ingredients together in a bowl until well combined. Add additional salt to taste, if needed, but bearing in mind some pizza toppings can be pretty salty themselves. You might not need additional salt.
Step 2
Spoon the sauce into ice cube tray(s), distributing it evenly. (No need to fill all the cups—just make sure the cups you do fill are filled to about the same level.)
Step 3
Cover the trays securely with cling wrap, and then foil. Freeze for several hours, sitting level. When the cubes are frozen solid, remove them into a labeled freezer bag and quickly pop them back into the freezer to store.
Step 4
When you’re ready to make pizza, unthaw the desired number of cubes. It’s that easy!
