Step 1
Tear the rye bread and whiz into crumbs in a food processor, then toast in a large non-stick dry frying pan on a medium heat until really crisp and gnarly. Once done, decant into a small dish, leaving the pan on the heat.
Step 2
Finely chop the bacon and place in the pan with 1 tablespoon of oil. While it crisps up, peel and finely slice the garlic, and pick and finely chop the rosemary leaves. Toss into the pan, then, when lightly golden, remove from the heat and add the balsamic and a splash of water to make your dressing.
Step 3
Pile the spinach leaves into a nice serving bowl. Finely chop the pepper, then in a separate bowl toss with all the sprouts, half the breadcrumbs and the balsamic dressing, then spoon over the spinach. Sprinkle over the remaining breadcrumbs, crumble over the feta and serve.
