COUNTRY INN GRANOLA PARFAIT
This gold-standard granola has always been our family’s favourite, so it’s only natural we share it with our country inn guests and your home too. It’s packed with more than enough whole-grain goodness to start everyone’s day. The granola’s ingredients are flexible too. Maintain the basic volume measures within the nut-and-seed
category but feel free to simplify or improvise, substituting your favourite ingredients. We do with every batch. We stick to the formula, but since we make granola almost daily we constantly try different ingredient combinations. This recipe makes a big batch of granola, so you’ll have plenty on hand for several breakfasts. Our tangy homemade yogurt shines in this parfait, but any natural plain full-fat yogurt will give you equally delicious results. The whole-grain granola opping is crunchy, while the fruit preserve on the bottom is an unexpected yet balanced treat

1 cupvegetable oil
1 cuppure liquid honey
1 tablespooncinnamon
1 tablespoonnutmeg
15mlpure vanilla extract
8 cupsoats
quick-cooking, or large-flake
1 cuppine nuts
toasted
1 cupunsalted roasted pistachios
1 cupwalnut halves
toasted
1 cupunsalted roasted sunflower seeds
1 cupunsalted roasted pumpkin seeds
1 cupflaxseeds
lightly ground
2 cupsraisins
prunes, or other dried fruits
PARFAIT
1 cupStrawberry Citrus Stew
this, or your favourite
preserved fruit
1 ½ cupsplain full-fat yogurt
natural
1 ½ cupsGranola
or your favourite all-natural
Instructions
Step 1
Make the Country Inn Granola
Preheat the oven to 325°F (160°C). Line 2 baking sheets with
parchment paper or foil and lightly oil.
Measure the vegetable oil into a small saucepan. Use the same
measuring cup for the honey to ease the sticky mess. Add the
honey to the oil along with the cinnamon, nutmeg, and vanilla. Whisk
over medium heat until the honey smoothly melts into the oil, a
minute or two.
Toss the oats into a large bowl, pour in the spiced honey, and stir
until thoroughly combined. Divide the oat mixture evenly between
the prepared baking sheets. Bake, stirring every 10 minutes, until
golden brown and fragrant, 45 minutes or so.
Meanwhile, in the same bowl, toss together the pine nuts,
pistachios, walnuts, sunflower seeds, pumpkin seeds, flaxseeds, and
raisins.
Carefully scrape the hot granola into the bowl. Toss everything
together while the granola is still hot, then let cool. Transfer to an
airtight container or resealable plastic bag and store at room
temperature for up to 2 weeks.
Step 2
Make the Parfait
Divide the strawberry citrus stew among 4 wide-mouth 1-cup (250
mL) mason jars. Carefully add a thick layer of yogurt. Top with
country inn granola. Serve immediately or cover tightly and
refrigerate overnight.
