Instructions

Step 1
In a bowl mix the milk with the melted butter, and then sprinkle the yeast on top. Let the yeast activate for ~10 minutes.
Step 2
Stir in the sugar and the salt, then add in the banana.
Step 3
Gradually fold in the flour and knead the dough for one minute – the dough should be loose and springy. Add the dough to a bowl brushed with oil, cover it and let it prove for one hour.
Step 4
Once proved, roll out the dough in a rectangle. (0.5 cm thick)

Brush the dough with butter.
Step 6
In a bowl mix the brown sugar with the cinnamon and the nutmeg, and then sprinkle it evenly on top of the dough leaving 1cm clean on the sides.
Step 7
Carefully roll the dough and cut it into 10 pieces. Add the cinnamon rolls to a tray lined with baking paper and let them prove for 15 minutes. Then add them to the preheated oven at 180 degrees for 25 minutes or until lightly brown.

Optional: Mix the icing sugar with a bit of water until a paste it formed and glaze the cinnamon rolls once they have cooled.
