2 lbsbeef stew meat
cut into small chunks
Sofrito
yellow & red onion, plum tomatoes, garlic, green & red pepper, cubanelle pepper, bouillon cube, black pepper, adobo, salt, oregano, cilantro, squeeze of lime
Seasoning
adobo, black pepper, onion powder, salt, garlic powder, paprika, oregano, creole seasoning, maggie seasoning sauce
1 tspsugar
olive oil
tomato paste

Instructions
Step 1
Wash your beef stew chunks with vinegar and lime. Add in your seasonings and sofrito. Mix until everything is well combined and let it marinade for at least 2 hours.
Step 2
Once the meat is done marinating you will heat the stove to medium and add in olive oil and sugar to the pot. Once sugar is caramelized you will add your beef stew chunks. Once they have browned you will Add in 1-2 cups of water (I just add water to the same bowl the seasoned
meat was in) and simmer for 25-35 minutes or until meat is tender (Tip: If the water dries up before meat has had a chance to tenderize, add more water!)
Step 3
Once the meat is tender, you will then add 2-3 tablespoons of tomato paste, cilantro ,and veggies of your choice ( I add diced peppers, diced tomatoes, sliced white onion, carrots and potatoes) Stir the mixture well, close the lid, lower the heat to medium low and cook for about 20 minutes or until vegetables are soft (Note: After adding the tomato paste the stew should cook down into a thick sauce/gravy. You can add more water if the sauce gets too thick ! As always taste and adjust seasonings as needed)
Step 4
Serve with white rice, avocado slices and fried plantains 🤎
